Vegan Caesar Salad Dressing

What does a mamakins do when one child is mostly vegan, one is vegetarian and one is total carnivore? We all love salads now that the weather is warming up and Caesar is a fave in my house. But the dressing has to work for all of us. This means no eggs and no anchovies! 

This is what I came up with...

1/3 c tahini 

1big clove of garlic 

2-3 T capers

Juice of 1 lemon

2 t Dijon mustard 

Sea salt 

Fresh black pepper 

Blend it all together and that’s it.  I used this to make a kale and romaine Caesar salad but you can use just kale or just romaine. I put the Parmesan and the croutons on the side since I’m gluten free and I don’t eat much dairy either. I also roasted chicken breast for my son and I, wild salmon for my daughter and also had some tofu Kahn for my vegan daughter. Everyone was happy and I didn’t have to make three different dinners!
